salad-ish


Lunch today is a nice, rich salad. I personally don't love average salads, especially in cooler weather, but I wanted to use up some arugula while it’s still nice and fresh and also the extra pasta noodles from last night's dinner, so these ended up being a superdelicious salad-ish meal. I just layered a few simple ingredients: peppery arugula, squiggly pasta, creamy avocado, cherry tomatoes, raw pepitas and a garnish of tiny arugula microgreens. (All except the noodles and seeds are fresh, local and organic.) Tossed it with an equally simple lemon vinaigrette and chowed... This tastes too good to be called salad!
