simple comforting veg soup.
Made a simple soup tonight: zucchini, fire roasted tomatoes, garbanzo beans, olive oil, garlic, onion, sea salt, black pepper, cayenne pepper, artichoke hearts, balsamic vinegar, fresh basil and lemon juice, and a handful of whole wheat macaroni noodles. I dusted it with a little vegan grated parm as I served it. Warming and nourishing :)
