Cheezy Pasta Tubes


It's getting late and I'm feeling pretty lazy with this cold clogging up my head, so I throw together a quick pasta using all the leftover noodles. I heat some olive oil in a wok and add a bowl of yesterday's pasta pesto along with the rest of the plain rice noodles. Then I make a sauce of soymilk and nutritional yeast with garlic, sea salt, black pepper and mustard. Throw in some sundried tomatoes and pistachios and sprinkle some hemp seeds on top... That's dinner. Could have been even better with a handful of fresh herbs but its dark and pouring rain outside so I'll do without. Bon appetite, and goodnight!
