WHAT DO VEGANS EAT?!? I get asked all the time, and as a new vegan I’m learning to prepare fresh, delicious food that’s beneficial for ME, for ANIMALS, and for OUR PLANET. Sustaining a nourishing plant-based diet will require being creative, conscious and conscientious in my food choices. Saturday June 11th
11:42am
Lots of spicy fresh arugula from this morning's farmers market tossed with a little olive oil, nama shoyu, bean lentil and peanut sprouts, and seaweed gomasio, all wrapped up in a spinach wheat tortilla.
7:40pm
Eagle made a garden-fresh cucumber salad with lots of dill, veganaise, sea salt and cayenne. Love it!
Fresh lemon basil from my student Kelly's garden. (She's the one who brings me the most amazing lillikoi!) Thanks Kelly!!!
Saturday night pasta party is almost ready: I infused some extra virgin olive oil with fresh garlic and dried chili flakes, then lightly sauteed some broccoli in it. Tossed whole wheat spaghetti with more olive oil and sea salt, added half a dozen chopped tomatoes, fresh lime juice, and lots of lemon basil. Mix it all up... Dinner is served!
7:55pm
A sprinkling of hemp seeds to top it off... Ohhhhhh boy :)
