Checking In... Still Settling. (Saturday 1/22/11)

Well, it's been nearly two weeks since I arrived back on Kauai but i"m still living in a bit of a "vacation mode"... too much food, too many drinks, too much sugar, too much caffeine, eating too late at night... too much, too much! (Toomba jasti!!!) This is all fine and fun for a short while, but now I feel it's starting to catch up with me and I'm ready to get back on a little more of a routine with fresh, clean food and early dinners. In all honesty, though, my moon is coming so I know that generally leads to more of what I've been doing while I take rest from practice for a few days...

We'll see what happens. It's all good :) Peace and love and let's eat!

Happy Full Moon Day! In Ashtanga Yoga tradition we take holiday on the full and new moon, which means no morning yoga practice. As a yoga teacher, it also means this morning is one of only 2 mornings each month where I don’t practice or teach, so it’s a full rest day. Ahhhh!!! Slept late then spent the morning sipping coffee and experimenting with creating some vegan chocolate banana bread... click the "RECIPES" tab (above) if you’d like to try some.

I heart WRAP SANDWICHES :) This whole wheat spinach tortilla is filled with sauteed vegetables: broccoli, carrot, onion, red pepper, zucchini, tomato and grated garlic with olive oil, balsamic vinegar, sea salt, ground pepper, fresh parsley, lentil and bean sprouts, olives, sunflower seeds, chia seeds and hemp seeds (everything but the kitchen sink!)... And served with a few salt & vinegar POTATO CHIPS.

WRAP SANDWICH: organic whole wheat and spinach tortilla wrap filled with warm brown rice, fresh torn kale, cherry tomatoes from my yard, lots of raw sprouted beans and lentils, parsley, hemp seeds, olive oil, sea salt, black pepper, a dash of fresh local homemade hot sauce and fresh lemon juice (also from my yard!) with a side of fresh, local, organic GUACAMOLE & CHIPS (some kind of strange "Doritoes" style seasoned corn chips with minimal ingredients listed on the label but it still feels somehow taboo to eat (vegan) Doritoes...) But overall it's a pretty nice lunch :)

Vegan BOCA BURGER topped with fresh tomato slices and soy "blue cheese"... toasted whole wheat English muffin with olive oil... fresh local organic arugula tossed with a simple homemade vinaigrette (extra virgin olive oil, balsamic vinegar, grated garlic, sea salt and black pepper)... Yummy!!! :-)

Homemade VEGAN PIZZA: believe it or not, these 3 items plus some olive oil and fresh basil make a mean (and easy) vegan pie! The only problem is it's impossible to stock the ingredients in the house to have pizza on a future date... Once the stuff comes home, pizza always wins out over any other option!
