late-night wrap


Late-night wrap sandwich dinner: a Boca burger with kale, tomato, nutritional yeast, veganaise and ketchup on a sundried tomato whole wheat tortilla.

Lunching at Hanalei Bay... Lettuce, tempeh salad, cucumber, carrot, and peas from the organic salad bar at Harvest Market. This is the view from the car as I’m eating my salad and watching the surfers. Then I think I'll go nap in the sand...

muddy moon day morning


Moon Day Morning tea on a muddy porch.

There's been surprise construction work with reeeeeeally loud heavy machinery going on right in the yard all week. It's been pretty intense and now all the freshly dug up dirt has combined with lots of rain to make a muddy mess of our entryway. Still, I love to sit out here and sip my tea on the sunny mornings when I’m not teaching.

coco water by the sea.


Drinking a can of coconut water by the sea, after running errands this afternoon. There’s a heavy gray sky but it’s still nice to stop and watch the waves for a few minutes.

I take a long and much-needed nap this afternoon then brew some Yogi Tea: India Spice. It's like indian-style chai without the caffeine, so I add a bag of black tea too, and a splash of vanilla soymilk and a little bit of raw sugar... Wish I had some jaggery!

leftover YUM!


Sometimes leftovers are delicious! Toasted naan with coconut oil and sea salt, lemon basmati rice, and daal... I stirred in the last of the coconut vegetable lentils and added lots of fresh tomato and cilantro to it. Minimal effort, maximum YUM!

noodles & kale.


Some simple, and hopefully fairly easy to digest, pasta. I cooked and cooked and cooked some kale (although it is quite tender here and tastes so good raw, I know I'd better try to eat more cooked foods for a while). Sauteed the kale in some olive oil then added a little sea salt and lemon juice, a splash of hot sauce, and the extra whole wheat spaghetti noodles from last night. Couldn't resist sprinkling a little grated vegan soy "parm" on top. Some people say wheat breads and pastas are difficult to digest but I've always done well with them. So that's dinner: Quick, tasty, and COOKED!

Worth Every Minute.


Indian Lunch. Today I make Yellow Daal with Tomatoes and Red Chili, Coconut Curry Black Lentils with Green Beans and Carrots, and some Lemon Basmati Rice. (And "Garlic Butter Naan" but that just came out of a package and went into the oven.) Takes me quite a while to create this feast, but it's worth every minute. I've said it before, and I'll say it again: Indian Food is Bliss!

What goes into the best pasta ever? Eggplant. Zucchini. Sundried Tomatoes. Really Good Cured Black Olives. Fresh Basil. Extra Virgin Olive Oil. A Chunky, Pesto-y Mix of Macadamia Nuts, Garlic, Nutritional Yeast, Fresh Parsley, Red Pepper Flakes, Black Pepper and Sea Salt... Tossed with hot organic whole wheat spaghetti... It's Bliss. Seriously, you should make this!

super green root beer?


I had the "tropical fruit" flavor of this super green drink a couple weeks ago and really liked it; it tasted good and gave me lots of energy. This one is "root beer" flavor... I thought it might be a little strange but it's actually pretty tasty!

Veg Green Curry in a Hurry


Today I made a quick, easy and delicious Veg Green Curry with Coconut Milk for lunch:
Broccoli
Carrots
Red Bell Pepper
Water Chestnuts
Cashews
Coconut Milk
Thai Green Curry Paste
Red Chili Pepper
Kafir Lime Leaves
Lime Juice

Served over Short Grain Brown Rice
with Black Sesame Seeds... Mmmm :)

late-night quesadillas


And finally, dinner. My rosy martini-soaked brain decides to make quesadillas when we arrive home around 10 tonight: sundried tomato wraps filled with Daiya cheddar, fresh tomatoes, and the “bacon-y”, garlic-y leftover breakfast potatoes from this morning, then grilled in a pan with some earth balance and served with cilantro microgreens and way too much hot sauce. Superlate but sooooooo much better than the restaurant food!!!

V-Day Dinner-ish


We go for a drive to see the sunset, then somehow end up at a busy restaurant thinking maybe we’ll have a (unplanned) meal. Since it’s V-Day they are only offering a set menu, not vegan of course. So we order what we can to snack on: a boring salad, and some bread with watermelon cubes (this is what’s left of their veg options when you remove the cheese) and figure we’ll have a drink then eat back at home...

Raw vegan truffles... superdelicious, and superexpensive! I’m going to try to make these at home, right after I eat this jar... ;)

A PINK KNIFE!


This morning I received a very sweet Valentine's Day surprise: A PINK KNIFE! (What?!) Yep, it's a nice, new supersharp, stainless steel kitchen knife with a pink ceramic coating and handle. Awesome! (Thanks Eagle!)

So I spend the afternoon chopping just about everything I have in the house...




today's vata tea


Made a big, warm jug of vata-soothing tea to sip on this afternoon. Today's version has fennel seeds, cumin seeds, coriander seeds, fresh ginger and turmeric, ground licorice root and fresh lemon juice. I'm not sure that the astringent quality of turmeric is good for vata but I think a little might be ok mixed with all these other things, plus the fresh turmeric root was so beautiful and calling me to use it that I just couldn't refuse ;)

Vegan Diner-Style Breakfast (Everything you want and nobody gets hurt!)


I make a huge vegan "diner-style" breakfast today: scrambled "eggs", breakfast potatoes with "bacon", and spicy collard greens. Whoa. Even the vegan version of this diner-style plate is too much for everyday, but it's pretty amazing!

lovin' the lilikoi


Lilikoi (passion fruit)... My first! It's goopy and sweet and sour and I suspect that probably means it's good for pacifying vata. I'm lovin' the lilikoi! Maybe I should make this a habit.
