Broccoli & Sweet Potato Coconut Curry


A can of organic coconut milk and some red thai curry paste make for an easy veg curry dinner! I just added a few fresh, local, organic extras: grated ginger, hot peppers, and kafir lime leaves picked right off the tree in my yard. Tossed in some fresh local organic sweet potato and broccoli and organic tofu, a little green onion and sweet basil, and spooned it all over organic short grain brown rice. Yum!
