Veg Burgu


Vegetarian Burgu. It’s a thick, spicy coconut curry stew with a sense of humor.

  1. here's what's in there today...
    can of organic coconut milk
    lots of thai red curry paste
    red pepper flakes (or not)
    kaffir lime leaves
    fresh grated ginger
    fresh grated garlic
    splash of shoyu
    cubed tofu
    cubed potatoes
    (or sweet potatoes would be great, or squash!)
    green beans
    sliced onion
    sliced carrot
    bok choy
    a big squeeze of fresh lemon or lime juice
    lots of fresh cilantro on top
    EASY!!!
    ...i made this pot thick like a stew with 2 cans of coconut milk and let it simmer on low, uncovered, to thicken a bit... but it's also awesome with 1 can of coco milk and some water to make a thinner sauce and then serve it over short grain brown rice... i really love broccoli and tempeh in this sauce... loads of basil on top is great too... just throw in whatever veggies you like; pretty much anything tastes great in a coconut curry sauce! :)
