carrot cake


Even though I've caught a cold, I can't seem to stay out of the kitchen! This afternoon I'm inspired to attempt a vegan carrot cake. It's made of whole wheat flour and barley flour, and full of carrots, raisins, walnuts and pineapple. I make a vegan cream cheeze icing too, and cover it with shredded coconut. Yum!
