Thursday March 17th

Today was a really fun, and busy, day... and the beginning of what seemed like many busy days to follow it. Too much fun, too many friends, too many people over the house, too much commotion, too many errands, too much, too much, too much! (But still, I'm remembering to be grateful for the abundance of all that surrounds me...)

Lunch today (while Jen and I prepare to make some special avo ice cream!) is a fresh kale salad dressed with olive oil, lemon juice, sea salt, cayenne pepper and agave, some tempeh salad from the market salad bar, and baked potato chips.

The first peas from my garden! They taste so crunchy and sweet and fresh and green... Mmmm!

Dinner: Short grain brown rice. Collard greens sauté/steamed with olive oil, garlic, sea salt, black pepper and lemon juice. Avocado. Cherry tomatoes. Cilantro. Pumpkin seeds. Yum, yum, yum.

And dessert... My friend (and amazing vegan chef) Jennifer came over earlier today and taught me how to make “ice cream” out of avocados! This one is lemon-lime flavor and it’s delicious and supervibrant green! We also made a raspberry-cardamom sauce to pour over the top... soooooooo good!!! Thanks Jennifer :)
