WHAT DO VEGANS EAT?!? I get asked all the time, and as a new vegan I’m learning to prepare fresh, delicious food that’s beneficial for ME, for ANIMALS, and for OUR PLANET. Sustaining a nourishing plant-based diet will require being creative, conscious and conscientious in my food choices. Here I’ll share a “learn as I go” adventure on the path to healthy, happy, VIBRANT VEGANISM! Follow as my food evolution unfolds and maybe you’ll even be inspired to join me...

I Heart Sundays! (Sunday May 1st)
Fresh squeezed grapefruit juice after practice. It tastes as vibrant and delicious as it looks! Ahhhhhhhhhhhhhh :D
(5/1/11 1:42 PM)
Making lunch...
An afternoon feast! Mexican-ish rice (organic brown rice with fresh jalapeno, green pepper, onion, tomato, sea salt and nutritional yeast), chips, salsa, avocado, arugula, sprouts, and even fresh sweet corn! ...a little olive oil, fresh squeezed lemon and a sprinkling of chia seeds make it just perfect.
(5/1/11 3:38 PM)
And a little "Liquid Aloha" to round it out!
Someone looks happy with his plate of seconds :)
Time for a little dessert treat!
These sweet little raw vegan lilikoi pies are ridiculously expensive... But also ridiculously delicious and worth every penny!
(5/1/11 7:17 PM)
Just a spoonful of "ice cream"... Wow, this flavor is good!
(5/1/11 7:29 PM)
And I sip some chamomile tea before bed. Goodnight!
