coocoo for coco


Coconut water. I'm so thirsty today! And the good news is, I'm finally starting to feel better... My cold is subsiding. Thank goodness!!!

Grilled sammie and fries.


Surviving this morning's tsunami scare deserves a special lunch!

The sandwich is a sunshine patty with veganaise garlic aioli, lettuce, tomato and cucumber on grilled Hawaiian sourdough.

The fries were inspired by a recipe I came across somewhere that called for boiling thinly sliced potatoes in white vinegar then grilling them. I've always loved my fries brit-style with salt and vinegar (malt vinegar, actually) so this idea to cook the potatoes in vinegar instead of putting it on top stuck with me...

Today I just cut the potatoes into thick french fries, boiled them in a mixture of white wine vinegar and apple cider vinegar since that’s what I had on hand, then “fried” them in a pan with a little olive oil, salt and pepper. Oh, and I made a garlic aioli for dipping.

Yum!!!

tsunami morning!


This morning I wake and see 29 missed calls on my iPhone. "OH NO!" I exclaim, worried and fearful of what I will hear when I call back my parents' number... then my partner tells me, "Oh, it's okay, there's a tsunami warning." WHAT!?! I call to reassure my parents that I am ok and try to estimate how far above sea level I live... I'm pretty high up. When I get out of bed I check out all the news info on the internet: beaches evacuated, people stocking up on food, water and gas last night, etc. Wow! And I had no idea.

The ocean sounds LOUD but it looks like we're not going to get washed away so it's time to send out some gratitude for safety here on Kauai and prayers for Japan, then get on the mat for practice and head to Pineapple Yoga to teach.

I drink my chai and enjoy the beautiful morning sunlight streaming into the shala as mysore class is about to begin. The students are few and slow rolling in today... part of the main road here on island is closed from the tsunami evacuations so some students can't get through and I'm sure many others are home watching the news or checking in with their loved ones...

So grateful that we are all ok, hoping for the best for Japan and others...

soupereasy dinner!


Gonna make an easy meal tonight with some spaghetti and a couple boxes of organic bean soup...


I boiled the spaghetti and threw in a big bunch of chopped kale in the last minute or two of cooking. Drained then tossed that with extra virgin olive oil. Poured some spiced-up bean soup on top and topped it with fresh chopped tomato and basil. Added a sprinkle of vegan parmesan... And that's dinner.
