May 21st Saturday


6AM
Last night: A just-before-bedtime vegan cookie @ Steve & Meryln's, after a cup of sugary chai earlier in the evening. This morning: I wake feeling low blood sugar. Boooooooo! But the good news is, I forget all about it once I see this view from the guest bedroom!

Rainforest treasure tea in a soup bowl. (What?!? I dunno.)

Merlyn prepared a breakfast treat for Eagle and I before class: supergreen smoothie with kale, turmeric, and lots of other healthy, delicious stuff. Thank you!!!

After morning Mysore class I head home, where there's still no water. I make a simple kale and potato salad: raw kale (torn and well massaged with a little extra virgin olive oil), boiled red potatoes, a little tamari, squeeze of fresh lemon juice, sea salt, black pepper, dash of cayenne, hemp seeds and sesame seeds.

Iced Tulsi Tea. Refreshing!

Hot ginger lemon water... And then a nap :)

I wake from my nap feeling a little low blood sugar-ish again, and wonder if it's really low blood sugar or maybe I've been eating too much raw food and it's getting me ungrounded? So I munch on a few of these chips E brought home before I realize that dry, crunchy chips aren't really going to help that situation either way...

A little black tea with mate and a splash of vanilla soymilk.

On my way to dinner and a movie... This is a little red wine to go! I feel like a kid sneaking something I'm not supposed to have. It's kinda fun ;)

Verde vegan burrito filled with potatoes, green beans, spinach and lots of broccoli. It has a little salsa and some kind of avocado sauce. Tastes extra fresh and good today. Yum!!!

Friday May 20th


10:25AM
Raw organic mac nuts for breakfast. The water at the yurt has been shut off since yesterday afternoon, so we had to sleep at our landlords' house last night. This was actually very nice as their house is beautiful and I got to soak in a giant bathtub, yay! But now I'm back home after a morning of teaching, and there's still no water and not much to eat :(

A smoothie while I run errands with a girlfriend this afternoon: coconut milk, chai spices, protein powder and rice milk.


5:49PM
I still don't have running water but I'm hoping I can cook at home anyway if I keep it simple. I make boiled potatoes with sautéed onions and tamari tempeh. Sea salt, black pepper, a little extra virgin olive oil and lots of fresh basil. Simple. And good!!! (Although I realize later that I can't wash the dishes and have to put them all in the refrigerator to keep away the ants. Oops!)


We're dogsitting today... and who could resist this sweet face begging for some tempeh and potatoes? Oh Bella, I love you.

I make a caffeine-free chai with raw sugar and soymilk for dessert.



8:20PM
We get to our landlord's house again tonight and find there's a little party going on! I eat one vegan cookie. It's kinda shortbread-ish with chocolate chips. Yum!

Thursday May 19th


7:30AM
My morning herbal tea (tulsi jasmine today) and a big jug of water at Mysore class. I've been so thirsty lately!


10:23AM
Craving a kombucha after class this morning!


11:22AM
Fresh local organic tomato and cucumber with parsley and dill from my garden, a little extra virgin olive oil and balsamic vinegar, sea salt, and a sprinkling of raw sunflower seeds.


1PM
Iced tulsi tea. Yum! Refreshing and caffeine-free.


3:04PM
Raw organic macadamia nuts and a little studying...


5:12PM
Sipping on miso soup: "Kyoto Red Miso" (rice and soybeans) with wakame seaweed and a splash of tamari.


6:53PM
A very small, very simple salad: fresh lettuce just picked from the garden and some organic quinoa. It's lightly drizzled with extra virgin olive oil, a splash of balsamic vinegar, sea salt and hemp seeds.


8PM
The water has been shut off at the yurt all day, so our landlords are kind enough to offer us a room to sleep at their beautiful beach home and gardens tonight. I'm kinda bummed to leave my own home, but when I get there I find a beautiful suite with a big fluffy bed and a giant outdoor bathtub, yay!


And then, as if I'm not already in heaven soaking in the tub, Merlyn brings chilled coconuts and apples for a treat before bed. I don't eat the apple but LOVE the cool coconut while I'm in the hot tub. I think I'll be having supersweet dreams tonight!

Making lunch... A nice big batch so I have plenty to share. I want to take some for the lovely couple at the ceramics studio when I go to trim my bowls this afternoon :)


Brown rice penne, pesto (basil, garlic, mac nuts, lemon, olive oil and sea salt), carrots, zucchini, cherry tomatoes and black pepper.

Tonight a student and friend (and chef!) has invited Eagle and me for dinner. We all take a lovely long walk around the grounds at his house and then sit around a small table sharing stories and enjoying a delicious, simple meal of salad with fruit and herbs, ginger quinoa, and tomato mushroom onion stirfry. It’s so nice! Afterwards we all head to the beach and meet some old and new friends for a short new moon manifestation gathering around a warm bonfire. I leave feeling happy about all the beauty I enjoyed in this day and inspired by the energy of the new moon :)

I Heart Sundays! (Sunday May 1st)

Making lunch...


An afternoon feast! Mexican-ish rice (organic brown rice with fresh jalapeno, green pepper, onion, tomato, sea salt and nutritional yeast), chips, salsa, avocado, arugula, sprouts, and even fresh sweet corn! ...a little olive oil, fresh squeezed lemon and a sprinkling of chia seeds make it just perfect.

These sweet little raw vegan lilikoi pies are ridiculously expensive... But also ridiculously delicious and worth every penny!
